LOW CARB ENCHILADA MEATBALLS

Low Carb Enchilada Meatballs savory and cheesy in the best ways possible, these beef Enchilada Meatballs are made with fresh chopped cilantro, gooey cheese and creamy red enchilada sauce. It's an easy, one pan dinner idea your whole family will love! 


INGREDIENTS

Meatballs:

  • 1 lb ground beef
  • 1 egg
  • 1/4 cup grated real cheddar cheese
  • 2 tbsp taco seasoning
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon of salt
  • 1/4 teaspoon black pepper


sauce

  • 1/4 cup enchilada sauce (3g sugar or less)


DIRECTIONS:

Meatballs:

  1. Preheat the oven to 400.
  2. Add all meatball ingredients to a large bowl and mix well until combined.
  3. Shape about 15 meatballs and place on a foil lined baking sheet.
  4. Bake for 25 minutes or until cooked through.


Assemble Casserole:

  1. Preheat the oven to 350.
  2. Pour 1/4 cup of enchilada sauce into the bottom of a small baking dish or cast iron skillet.
  3. Place cooked meatballs in dish and top with remaining enchilada sauce. Garnish with grated cheese. 
  4. Bake for 15 minutes or until cheese is melted and bubbly.
